Itachi thinks Matt is amusing. He sometimes laughs at Matt's antics--either when Matt is frustrating someone, or when someone is frustrating Matt, Itachi is equal opportunity in being amused.

He doesn't really find Matt irritating, he's good entertainment, especially when he's trolling Kamui.
